Soft & Sweet Yatsuhashi Mochi

Ingredients
- 1 cup glutinous rice flour
- 1/4 cup sugar
- 3/4 cup water
- 1 tsp cinnamon powder
- Cornstarch or potato starch (for dusting)
- Sweet red bean paste (anko)
Time
- Prep Time: 15 minutes
- Cook Time: 5 minutes
- Total Time: 20 minutes
Steps
- In a bowl, mix glutinous rice flour, sugar, cinnamon, and water until smooth.
- Microwave the mixture for 2–3 minutes until soft and sticky.
- Dust your surface with cornstarch and let the dough cool slightly.
- Roll the dough thinly and cut it into triangle shapes.
- Add a small spoon of red bean paste in the center.
- Fold the mochi into a triangle shape.
- Dust lightly with cornstarch and serve fresh.
