Japanese Sakura Mochi

Ingredients
For the Mochi
- 1 cup glutinous rice flour
- 2 tbsp sugar
- 1 cup water
- Pink food coloring (optional)
Filling
- ½ cup sweet red bean paste (Anko)
Decoration
- Pickled sakura leaves (optional)
Steps
- In a bowl, mix glutinous rice flour, sugar, water, and a few drops of pink food coloring.
- Pour the mixture into a non-stick pan and cook on low heat until it becomes soft and sticky.
- Let the dough cool slightly, then divide it into small portions.
- Flatten each portion and place red bean paste in the center.
- Wrap the dough around the filling and shape it gently.
- Cover with a sakura leaf if desired and serve fresh.
