Japanese Sakura Mochi

Ingredients

For the Mochi

  • 1 cup glutinous rice flour
  • 2 tbsp sugar
  • 1 cup water
  • Pink food coloring (optional)

Filling

  • ½ cup sweet red bean paste (Anko)

Decoration

  • Pickled sakura leaves (optional)

Steps

  • In a bowl, mix glutinous rice flour, sugar, water, and a few drops of pink food coloring.
  • Pour the mixture into a non-stick pan and cook on low heat until it becomes soft and sticky.
  • Let the dough cool slightly, then divide it into small portions.
  • Flatten each portion and place red bean paste in the center.
  • Wrap the dough around the filling and shape it gently.
  • Cover with a sakura leaf if desired and serve fresh.

  • Cooking Time: 15 minutes
  • Total Time: 35 minutes
