Fresh & Sweet Japanese Zunda Mochi

Ingredients
For the Mochi
- 1 cup glutinous rice flour
- ¾ cup water
- 2 tbsp sugar
For the Zunda Paste
- 1 cup edamame (green soybeans)
- 2 tbsp sugar
- A pinch of salt
- 2–3 tbsp water
Steps
- Boil the edamame until soft, then remove the skins.
- Blend the edamame with sugar, salt, and water until a slightly chunky paste forms.
- Mix glutinous rice flour, sugar, and water in a bowl until smooth.
- Cook the mochi mixture until thick and sticky.
- Shape the mochi into small round balls.
- Top or coat the mochi with the fresh zunda paste and serve.
