Fresh & Sweet Japanese Zunda Mochi

Ingredients

For the Mochi

  • 1 cup glutinous rice flour
  • ¾ cup water
  • 2 tbsp sugar

For the Zunda Paste

  • 1 cup edamame (green soybeans)
  • 2 tbsp sugar
  • A pinch of salt
  • 2–3 tbsp water

Steps

  • Boil the edamame until soft, then remove the skins.
  • Blend the edamame with sugar, salt, and water until a slightly chunky paste forms.
  • Mix glutinous rice flour, sugar, and water in a bowl until smooth.
  • Cook the mochi mixture until thick and sticky.
  • Shape the mochi into small round balls.
  • Top or coat the mochi with the fresh zunda paste and serve.

  • Preparation Time: 20 minutes
  • Cooking Time: 15 minutes
  • Total Time: 35 minutes
