Mango Mochi – Tropical Chewy Delight

Ingredients
- 1 cup glutinous rice flour (mochiko)
- 1/4 cup sugar
- 3/4 cup milk or coconut milk
- 1/2 cup mango puree
- Yellow food color (optional)
- Cornstarch/potato starch for dusting
Filling
- Fresh mango cubes
- Whipped cream or mango cream
Steps
- In a bowl, mix rice flour, sugar, milk, and mango puree.
- Whisk until the batter becomes smooth.
- Microwave for 2–3 minutes, stir, then cook again for 2 more minutes until the dough becomes sticky.
- Dust a surface with cornstarch and let the dough cool slightly.
- Flatten small portions of dough into circles and add cream with mango cubes in the center.
- Seal the edges and shape into soft balls.
- Chill in the refrigerator for 10–15 minutes before serving.
