Chocolate Ice Cream Mochi – Cold & Chocolatey Delight

Ingredients
- 1 cup glutinous rice flour (mochiko)
- 1/4 cup sugar
- 1 tbsp cocoa powder
- 3/4 cup milk or water
- Cornstarch or potato starch for dusting
Filling
- Chocolate ice cream (small frozen scoops)
Steps
- Scoop small balls of chocolate ice cream and freeze until firm.
- In a bowl, mix rice flour, sugar, cocoa powder, and milk.
- Microwave for 2–3 minutes, stir, then cook again for 2 more minutes until sticky dough forms.
- Dust a surface with cornstarch and let the dough cool slightly.
- Flatten small pieces of dough into circles.
- Place frozen chocolate ice cream in the center and quickly seal the edges.
- Shape into smooth balls and freeze for 30–60 minutes before serving.
