Mango Mochi

Ingredients

  • 1 cup glutinous rice flour (mochiko)
  • 1/4 cup sugar
  • 3/4 cup milk or coconut milk
  • 1/2 cup mango puree
  • Yellow food color (optional)
  • Cornstarch/potato starch for dusting

Filling

  • Fresh mango cubes
  • Whipped cream or mango cream

Steps

  • In a bowl, mix rice flour, sugar, milk, and mango puree.
  • Whisk until the batter becomes smooth.
  • Microwave for 2–3 minutes, stir, then cook again for 2 more minutes until the dough becomes sticky.
  • Dust a surface with cornstarch and let the dough cool slightly.
  • Flatten small portions of dough into circles and add cream with mango cubes in the center.
  • Seal the edges and shape into soft balls.
  • Chill in the refrigerator for 10–15 minutes before serving.

  • Cook Time: 5–7 minutes
  • Cooling Time: 15 minutes
  • Total Time: 35 minutes
