Chocolate Ice Cream Mochi

Ingredients

  • 1 cup glutinous rice flour (mochiko)
  • 1/4 cup sugar
  • 1 tbsp cocoa powder
  • 3/4 cup milk or water
  • Cornstarch or potato starch for dusting

Filling

  • Chocolate ice cream (small frozen scoops)

Steps

  • Scoop small balls of chocolate ice cream and freeze until firm.
  • In a bowl, mix rice flour, sugar, cocoa powder, and milk.
  • Microwave for 2–3 minutes, stir, then cook again for 2 more minutes until sticky dough forms.
  • Dust a surface with cornstarch and let the dough cool slightly.
  • Flatten small pieces of dough into circles.
  • Place frozen chocolate ice cream in the center and quickly seal the edges.
  • Shape into smooth balls and freeze for 30–60 minutes before serving.
